Ingredients:
- 4 unripe plantains
- 4 Tbsp butter
- 2 Tbsp oil
- 2 large onions
- 1 Tbsp vinegar
- 1 cup cold water
- Salt - to taste
Directions:
- Peel plantains & cut into 8 pieces
- Boil plantains & add 2 tsp salt to water
- Turn off the heat when plantains are tender
- Heat a Tbsp of oil in a shallow pan while plantains are boiling
- Saute onions, add salt & vinegar, set aside
- Take plantains out of the water & mash them with a fork
- Add the butter & cold water
- Mash until smooth
- Garnish with the onions
- Serve with scrambled eggs or deep-fried slices of salami (optional, yet traditional)
This is a common dish served in the Dominican Republic.
